Zucchini & Cheese Cream Sauce Pasta


1.5 light green/yellow zucchini

1/2 sweet onion

250 g short pasta of your choice

gorgonzola and/or other soft cheese

cooking cream





Thinly slice the zucchini and finely chop the onion.


Heat oil in a pan and add zucchini & onion when hot.


Cook (I prefer with a cover) until soft and translucent.


Add salt, peper, and peprika to taste.


Boil water with salt and cook pasta.  Drain and return to pan.


Add to taste (about a big spoon of each) the gorgonzola, another soft cheese such as robiola, and about two tbsps of cooking cream and mix well.


Add zucchini mixture and heat everything.


Serves 2.
